Caramelized Walnuts
Ingredients:

1 stick butter 
2 cups brown sugar 
2 Tbsp. sea salt
2 tsp red pepper flakes (more or less to taste) 
3 to 4 cups coarsely chopped walnuts
1 baking sheet covered in plastic wrap

Directions:

Melt  butter in frying pan on medium heat. Add brown sugar and whisk vigorously. Add salt and  red pepper flakes and continue to whisk until butter and sugar have mixed thoroughly becoming a caramel consistency and boiling. (IMPORTANT: if butter and sugar start to separate and sugar becomes crystalized you must discard and try again) 
Immediately remove from heat and continue to whisk while adding walnuts.
Once walnuts are thoroughly incorporated spread mixture on prepared baking sheet. Freeze until nuts have completely hardened. Remove from freezer and break apart like brittle, then chop to desired size.
